Bell Peppers
Red Bell Peppers are harvested green bell peppers that have ripened and matured, taking on a red color and a sweeter, milder flavor. They are rich in vitamins and can supplement your diet with essential minerals. To get the most nutritious, best-tasting product choose brightly colored red bell peppers with firm, tight skin, and avoid those with dull, shriveled skin. GGreen bell peppers are the most common color on produce shelves, but the yellow variety contains much more of certain vitamins. The peppers also contain fiber, protein and iron. Yellow bell peppers taste sweet and they pair well with a variety of other ingredients. They are available at most large supermarkets year-round, which makes it easy for you to add them to your diet. -

Bunching Onions
Bunching onions may be considered perennials, though they are technically biennials. However, because they’ll continue growing and dividing on their own, producing a continual supply, some gardening books refer to them as perennials. Bunching onions that are left in the ground over the winter will produce a purple flower cluster atop a stalk in the spring. They have a mild, tender onion flavor, much like young onion greens, and can be used fresh in salads or for fresh eating. Their flavor is at its mildest in the springtime. They do not form bulbs, as onions do, only a slightly swollen, white base. -

Butter Beans
Sometimes called "butter beans" because of their starchy yet buttery texture, lima beans have a delicate flavor that complements a wide variety of dishes. These fresh lima beans are often difficult to find. The pod of the lima bean is flat, oblong and slightly curved, averaging about three inches in length. Within the pod are the two to four flat kidney-shaped seeds that we call lima beans. The seeds are generally cream or green in color, although certain varieties feature colors such as white, red, purple, brown or black. -

Corn
Buy some local corn right after it's picked. It's fresh sweet corn with small yellow kernals. Just shuck the corn and boil it in water until it's tender. Add a dab of butter and enjoy it with any meal. -

Eggplant
Eggplant has spiny stem that can grow from 16 to 57 inches in height. This rich plant is often used as a meat substitute for vegetarians. It develops large green, deeply lobed leaves and produces star-shaped, white or purple flowers. They contain both types of reproductive organs (pistil and stamens) and can perform self-pollination. Fruit of eggplant belongs to the group of berries. The most popular types of eggplant are oval shaped and covered with smooth, glossy, purple colored skin. Flesh is whitish or creamy colored and has spongy texture. Some varieties of eggplant produce white, lavender, green or red-striped fruit that can be elongated, rounded or pea-shaped. The two things to keep in mind when cooking eggplant, especially firm globe eggplants, is that not only do eggplants hold onto moisture, they also absorb oil like a sponge. So if you’re not careful you can end up with something mushy and oily. -

Cucumbers
Our cucumbers are a table variety, used for slicing in salads and garnishing. This crisp vegetable is thick and long in shape with a bright green coloring. They are served cool and crunchy in a salad. The cucumber is often used as a part of a facial mask to provide moisture to the eye area. -

Zucchini
Zucchini is a form of summer squash. We harvest this summer squash when it is small and tender for the best taste. This summer squash family is rich in Vitamin A and are a good source of Anit-Oxidants. Almost all members of the squash family vegetables feature smooth skin, tender, crunchy flesh with small edible seeds and high moisture content. -

Summer Greens
Nothing says summer like a green salad. We grow a combination of chard, arugula, and kale. These leafy greens are delicious in a salad or to add to your favorite juice recipe or smoothie. These greens are very rich in Vitamins. -

Squash
This food is low in Saturated Fat and Sodium, and very low in Cholesterol. It is also a good source of Protein, Vitamin A, Thiamin, Niacin, Phosphorus and Copper, and a very good source of Dietary Fiber, Vitamin C, Vitamin K, Riboflavin, Vitamin B6, Folate, Magnesium, Potassium and Manganese. -

Red Tomatoes
The vegetable that is really a fruit! Fresh from the garden, these mouthwatering, delicious vegetables are crisp, bright red, and fresh; picked the same day as the sale. Perfect in a summer salad, or as an ingredient in your grandmother's spaghetti sauce, not to mention all of the great nutritional benefits the red tomato provides. -

Onions
These onions with the classic brown or yellow skin are a good all-purpose onion, and can be used interchangeably in a recipe. These onions hold up well under most cooking conditions, and can be used for stewing, frying, roasting – really anything except raw! -

Okra
Okra is a signature southern ingredient. It's hearty, healthy and easy too. While okra is somewhat slimy in texture, simply boiling it or by giving the okra a vinegar treatment, although you will need to do this well in advance.[2] Pour half a cup of vinegar into a bowl for every 500 g (1 lb) of okra. Gently swish the vinegar over the okra to coat all okra in the bowl. Leave for 30 minutes to soak in the vinegar. Remove the okra and rinse well. Dry and use as suggested by the recipe. -

Green Beans
A mealtime favorite, this fresh crispy vegetable is grown fresh in our garden and sold in bundles. Green beans are a delicious vegetable side dish or make a great main ingredient for the Traditional Green Bean Casserole. Excellent either boiled or sauteed with butter, garlic, thyme, or almonds.
